Rainbow Chocolate Chip Skillet Cookie

When I was a kid I always loved chocolate chip cookie cakes, especially from The Great American Cookie Company in our local mall. A chocolate chip cookie large enough to slice like a pizza? YES. PLEASE. I'm always looking for desserts that I can also use as decoration on celebration cakes and a slice of chocolate chip goodness is seriously a no brainer. The best part about these tasty treats? They are super simple and so quick to make!
RAINBOW CHOCOLATE CHIP SKILLET COOKIE

TOTAL TIME: 30 MINS
SERVINGS: 8
INGREDIENTS
6 tablespoons unsalted butter, room temperature
1/3 cup packed dark-brown sugar
1/2 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
1 cup all-purpose flour (spooned + leveled)
1/2 teaspoon baking soda
1/2 teaspoon coarse salt
1 cup semisweet chocolate chips
DIRECTIONS
Preheat oven to 350 degrees. In a large bowl, combine butter and sugars with a wooden spoon. Stir in egg and vanilla. Stir in flour, baking soda, and salt. Transfer to a 10-inch cast iron skillet and smooth the top. Generously sprinkle with sprinkle medley.
Bake until cookie is golden brown and just set in the center, 18 to 20 minutes. Let cool 5 minutes.

Since I'm a self confessed sprinkle addict I added a few more for good measure after the cookie cooled.
